大煮干丝</SPAN>
 </SPAN>
原料:</SPAN>白豆腐干2</SPAN>块(约 300</SPAN>克),开洋20</SPAN>克,鲜虾5</SPAN>只,葱姜适量</SPAN>
调味料:</SPAN>高汤300</SPAN>克,盐、鸡精、料酒各适量</SPAN>
做法:</SPAN>
1、</SPAN></SPAN>将豆干先片成薄片再改刀成细丝,浸入清水使其分开,然后滗去水,放入小煮锅中,加少许盐,用开水浸烫三次,除去豆腥味,然后过清水捞出沥干水份备用</SPAN>
2、</SPAN></SPAN>开洋用温水泡软后加入料酒,隔水蒸透;鲜虾去壳去虾线,入开水锅烫熟捞出备用;将姜切细丝</SPAN>
3、</SPAN></SPAN>往锅内加入高汤,将开丝、开洋下锅,大火烧开后加盐、鸡精调味,改小火煮15</SPAN>分钟,起锅前放入香葱末</SPAN>
4、</SPAN></SPAN>将干丝倒入碗中,撒上鲜虾仁</SPAN>
5、</SPAN></SPAN>将姜丝入油锅炸成金黄色放于干丝上即成</SPAN>
