味觉上的思念 古清生说莴苣是“淡淡清苦味儿的莴苣”，莴苣即是江西人指的莴笋。我吃莴笋从来没感觉到它有淡淡清苦味儿，是我的味蕾出了问题吗？也许是我喜欢在清炒莴笋时加入大量的蒜、干椒、朝天椒，这些味重的配料掩盖了莴笋那淡淡清苦味儿；也许那莴笋的味儿并不真的是清苦，只是，“在南方，莴苣代表了一种心情”。 莴笋是南方菜圃里放眼可见的菜。它分两种，紫红皮的和青白皮的。紫红皮莴笋肉比青白皮莴笋肉色绿，且生脆。有经验的人都偏爱买紫红皮莴笋。买菜时，我经常看到人们一窝蜂的挑选紫红皮莴笋，我就担心青白皮莴笋卖不出去。后来发现自己是杞人忧天，青白皮莴笋的叶子比紫红皮莴笋叶嫩、鲜绿，很多人认为买青白皮莴笋比较划算，叶子可单独成盘好菜。 青白皮莴笋叶同油麦菜相似，于是有人用它冒充油麦菜来卖。莴笋叶通常5毛钱一斤，而油麦菜一斤要3元钱左右，蒙混过关了，还真能赚到不少钱。不过，骗人诈钱毕竟要冒风险，我认识的两个把莴笋叶当油麦菜卖的人都早早金盆洗手了。 在这个我已行走无数次仍感觉陌生的菜市里，每天我都能遇到莴笋，它们被整齐堆放着，身上找不到一块泥 |
