饼皮部分:中筋面粉100克,奶粉5克,转化糖浆75克,枧水1克,花生油25克。 馅料部分:莲蓉约750克,咸蛋黄10个。 表皮部分:蛋黄1个+蛋清1大勺搅拌均匀刷表面 制作过程: 1、制作枧水:将碱面和水按照1:3的比例制成枧水 取一克枧水与熬制好的转化糖浆混合搅拌均匀 (如果转化糖浆比较粘稠,请加入少量清水入锅重新熬煮成与蜂蜜粘稠度差不多的液体状态) 2、加入花生油搅拌均匀 3、将面粉及奶粉倒入至搅拌好的糖浆内揉至成团,盖保鲜膜静置1小时 4、将醒发好的面团与馅料按2:8的比例分割好待用 (如果打算做80克的月饼,那么就分成饼皮部分16克,馅料部分64克) 5、分割好的饼胚面团揉至成小团,用手压扁放入馅料,轻轻用饼胚包入馅料(饼胚有些粘手,请在手上沾少许的高粉。) 6、月饼模内撒入些玉米粉,将包好的面团入模压制成型 7、烤盘铺锡纸放入饼胚,(饼胚较软可以将入模的饼胚直接压在烤盘上) 8、烤箱预热200度,中层上下火烤制5分钟月饼生胚定型后,将月饼胚取出用羊毛刷在表皮轻轻刷一层蛋黄液。再次入炉烤制15分钟左右, 烤制好的月饼完全晾凉后放入密封罐回油。这次的月饼隔天就回油了,饼皮软软的超级好吃。还看什么呢?赶紧动手试试吧 |
