    现在的生活条件越来越好,人的嘴也越吃越刁。就说这个汤团吧,从前是一年中只有过年时才能吃上,不管是什么馅的都觉得美味无比,现在好了,什么时候想吃都是随时可以吃上。可是现在是猪油芝麻馅怕油,白糖豆沙馅嫌甜,蟹粉鲜肉馅也说是吃腻了。这城里人吃来吃去到头来却看上了乡下的菜团子。前阵子去了位于上海西南郊有着千年历史的七宝古镇游玩,古镇老街的传统小吃琳琅满目,人气最旺的是某电视频道美食节目介绍过那家汤团店,不仅店堂里坐满的人,门口还排着长长的队。汤团品种很多,有鲜肉、豆沙、枣泥、芝麻和荠菜鲜肉等等,据老板介绍说,卖的最好的就是荠菜鲜肉馅的,城里人都喜欢这清香软糯,鲜而不腻的菜团子。那天实在是排队人太多,只能悻悻离开,回家自己包乡下菜团子了。
 
材料:材料:荠菜、猪肉、鸡蛋、姜、葱、糯米粉。
调料:盐、料酒、糖、鸡精、香油。
 



 
做法:
 1 将荠菜择去黄叶洗净,放入沸水中焯烫一下,捞出用冷水冲凉,再挤干水分,斩成末;
 2 猪肉剁碎,拌入姜葱末,调入盐、料酒、鸡精、少许糖和香油,加一个鸡蛋拌匀,朝一个方向搅拌上劲后,加荠菜末调和成馄饨馅;
 3 水磨糯米粉和热水以10:7的比例分次加入80度热水拌匀,和成软硬适中的面团;
  4 将面团分割成小块稍稍搓圆,用拇指按在面团中间,边转边按出一个洞,形成一个小碗的样子;
  5 填上适量的馅料,用手的虎口边转边收口捏紧,直至将馅料完全包裹住,再搓成圆球状;
  6 大火烧开煮锅中的水,放入包好的汤团,用勺背轻轻推开,让汤圆旋转几下不易粘锅;
  7 水开后加入适量冷水,水再开时再加入适量冷水;
  8 水再开转中火,等汤团浮起后再煮3分钟确保内馅煮透了即可。
