老爸来英国,目的之一给我们做饭解馋.早就在白马童鞋面前吹嘘过无数次俺爹的川菜厨艺,这回终于
Seeing is believing!
最热爱最想念的菜: 豆瓣鱼~~~ 老爸一端上桌,我们就哇哇了好几声!
从小就爱吃这道菜,但基本不点外面餐馆做的,只吃老爸做的,就好这一口!在英国能吃上真是幸福啊!

还有老爸做的其它家常菜,色香味俱全,白马已经在流口水了!

家乡的味道:川丸子汤!

 
望着老爸忙碌做饭的背影,感动幸福中......

 
这段时间我是享福了!!
 
另:带老爸去卡迪夫大市场吃英式早餐,老爸显然不适应一大早就吃那么多肉,满脸愁相.不过最后居然都吃完
老爸真是身体好,胃口好,吃嘛嘛香!

答:清汤分普通清汤和精制清汤。
(1)普通清汤:
原料:老母鸡(自然放养的老母鸡),配部分瘦猪肉。
火侯:原料用滚水烫过。放冷水旺火煮开,去沫,放入葱姜酒,随后改小火,保持汤面微开,翻着碎小水泡。火侯过大会煮成白色奶汤,火侯过小则鲜香味不浓。
出汤率:原料的1-2倍。
(2)精制清汤 (上汤,顶汤,单吊汤,双吊汤)
取普通清汤用纱布过滤。取鸡肉斩成肉茸,放葱姜酒及清水浸泡片刻。把鸡肉茸放入清汤,旺火加热搅拌。待汤将沸时改用小火,不能让汤翻滚。汤中浑浊悬浮物被鸡茸吸附后,除尽鸡茸。这一精制过程叫"吊汤"。精制过2次的清汤叫"双吊汤"。
清汤是制汤中最难制的汤,也是质量最好的汤。清澈鲜香。常用于鱼翅,海参或高档清鲜汤肴。
