1.</SPAN>先把芋头洗净去皮,切成滚刀切或菱形块,放盘内待炸。</SPAN> </SPAN>
2.</SPAN>芝麻拣去杂质后待用。</SPAN> </SPAN>
3.</SPAN>火上架炒勺,烧好后倒入油750</SPAN>克,烧至六成熟时,将芋头块放入,两次炸熟上色(</SPAN>呈金黄色)</SPAN>滗漓出油。</SPAN> </SPAN>
4.</SPAN>将炒勺内油倒出,留余油15</SPAN>克,将白糖200</SPAN>克放入锅中、不停地搅动,使糖受热均匀熔化,但火不宜太大,等糖液起小针尖大小的泡时,迅速将炸好的芋头块倒入,撒上芝麻,颠翻均匀后,盛盘上桌。</SPAN>
