我不知道这个是不是也叫做戚风，但做完之后吃起来的口感像生日蛋糕。 原料：蛋白4个 白醋几滴 细砂糖70G 蛋黄4个 低粉80G 水50ML 色拉油50ML 香草精1/2小勺 做法： 1、将蛋白与蛋黄分开 2、蛋黄加油、水、用打蛋器打到浓稠 3、低粉过筛加入蛋黄液中，搅拌均匀 4、蛋白加入醋、20G砂糖打发，打出细沫状再加入20G砂糖，最后再加入剩下的糖。打发至干性发泡 5、将1/3蛋白加入到蛋黄糊中，用刮刀从底部捞起拌匀，然后再倒入到蛋白糊中搅拌均匀 6、倒入模具震几下，除去大气泡 150度60分钟 出炉后倒扣，冷却后脱模 阅读全文>> |
