巧炸馒头片</SPAN>
一、</SPAN></SPAN>准备一碗凉水,炸时,将馒头片用水浸透后立即放入油锅炸(要浸一片炸一片,否则馒头会被泡碎)。这样炸出的馒头片金黄均匀,外焦内嫩,香甜可口。由于馒头浸水,炸出消耗的是水,所以可省油。</SPAN>
二、</SPAN></SPAN>做馒头一旦用碱过多,可以推迟下屉时间按,把面置于</SPAN>28</SPAN>度条件下缓醒,让里面的酵母菌等微生物借此机会大量繁殖,以产生较多的二氧化碳和乳酸,中和掉过量的碱。</SPAN>
如果用碱特别多,可</SPAN> 再老面和生面。一般老面</SPAN> 50</SPAN>克</SPAN>加生面</SPAN>250</SPAN>克</SPAN>,和原来的面一起搓揉,重新做成馒头上屉。</SPAN>
若出锅时才发现馒头黄了,可将蒸锅水清除一部分,加入一些醋,上火再蒸。大约</SPAN>20~30</SPAN>分钟,再醋酸蒸气的作用下,馒头可以重新变白。</SPAN>
